Chemical Composition

The chemical composition of Gum Arabic is complex and not yet fully understood, but what we know helps explain its properties and uses. Its polysaccharides comprise a repeating unit of galactose and arabinose, with some glucuronic acid and rhamnose attached. Its proteins are mostly glycoproteins, and minerals — mainly calcium, magnesium, and potassium — are present in minimal amounts.

These properties make Gum Arabic soluble in water and useful as a thickening agent, emulsifier, stabilizer, binder, adhesive, suspending agent, film former, gloss enhancer, and pH buffer.
